Recipe - Yuzu & Ginger Marinated Chicken

 

Summer is here which means it’s time to fire up the BBQ, and grilled chicken with a delicious marinade is always a go-to. Yuzu can often be described as lemony with hints of grapefruit and mandarin which provides a unique flavour profile to whatever you pair it with. Combined with the sweetness and heat of fresh ginger, this marinade will dazzle everyone’s tastebuds at your next barbecue. 

Ingredients 

1 x half chicken (breast and thigh, approximately 600g) 
1 teaspoon of table salt 
30ml of 100% yuzu juice*  
2 Tablespoons of freshly grated ginger 
2 Tablespoons of honey 
Some freshly ground white pepper to taste 

Method 

1. Rub your chicken all over with the table salt and leave in the fridge for 30 minutes. Then pat dry with paper towel.  

2. Place your chicken in a bowl or zip lock bag. Add yuzu juice, ginger, honey and pepper. 

3. Rub the chicken thoroughly with the marinade ingredients ensuring everything is well combined and the entire chicken is covered.  

4. Cover and leave in the fridge overnight. If you’re stretched for time a few hours will also work.  

5. Pre-heat your oven to 200℃. Heat a frying pan on medium heat till nice and hot.  

6. Add a little bit of neutral oil to the pan and place your chicken skin side down. Leave for a few minutes to allow the skin to sear and get some colour before turning. Cook for another two minutes.  

7. Place the chicken in the oven. You can leave it in the frying pan if it’s oven safe or place onto a roasting tray. Allow the chicken to cook through for around 13-17 minutes.  

8. Once the chicken is cooked through, remove from the oven and allow to rest for 5 minutes before cutting. 

5. Serve with your choice of sides.  

*fear not if you can’t find yuzu juice, the same amount of lemon juice with a little bit of grated lemongrass will also be delicious
