The name “Gaucho Bebop” is a playful nod to the Japanese anime show Cowboy Bebop, a neo-noir space western known for its unique blend of genres. This event title cleverly intertwines San Telmo’s bold, macho Argentinian roots with Robata’s vibrant, electric Japanese super-city aesthetic. While Cowboy Bebop was hailed as a new genre unto itself, Gaucho Bebop may not reinvent fusion cuisine, but it does mark the first time San Telmo has ventured into entirely new culinary territory. The Gaucho is heading to Tokyo, and things are about to get wild!
Though San Telmo and Robata may differ in their cultural origins, the fire that fuels their kitchens unites them. The San Telmo Group established its reputation for expert charcoal grilling with the opening of the Argentinian powerhouse San Telmo in 2011. A decade later, Robata brought the taste of Tokyo to Melbourne’s iconic Herald Sun building, with a name that literally translates to “fireside cooking.”
The connection between these two venues goes far beyond the grill. The chefs share a bond that began when Robata’s Head Chef, Stephen Clark—then the Master of the Grill at San Telmo—hired a young kitchen hand named Marcelo Narvaez. Narvaez who had just arrived from Colombia quickly rose through the ranks, becoming Clark’s right-hand man as Sous Chef, and eventually succeeding him as Head Chef at San Telmo in 2021.
Gaucho Bebop is more than just an event; it’s a celebration of shared history, culinary creativity, and the fiery passion that defines both kitchens.
